The Bale Mountains National Park holds the world's largest population of Ethiopian wolves, hunting giant mole-rats across a 4,000-metre Afro-alpine plateau, plus mountain nyala, cloud forest, and some of the best endemic birding in Africa. Harar

The walled city of saints, coffee, and the hyena men

Islam's fourth-holiest city: 368 alleyways inside 16th-century walls, 82 mosques, houses painted lime-green and pink, and men who feed wild hyenas by mouth at the city gates after dark — a tradition, not a show. Rimbaud lived here; the coffee grown on the surrounding hills is among the world's finest.

Coffee is Ethiopian: arabica evolved in these forests, and the washing stations of Sidama and Yirgacheffe produce the floral, tea-like cups that win world brewing championships. Lalibela

Eleven churches carved down into the rock, still in daily worship

The rock-hewn churches of Lalibela are the single most extraordinary human-made sight in sub-Saharan Africa — a 12th-century 'New Jerusalem' chiselled out of living volcanic rock, and a functioning place of pilgrimage, not a museum. Come for Timkat in January and you will never describe travel the same way again.

Trek the roof of Africa among gelada troops

A UNESCO escarpment of 1,000-metre cliffs, Walia ibex, and gelada monkeys in troops of hundreds that let you sit among them. Obelisks of a 3,000-year-old empire — and, tradition says, the Ark

The capital of the Aksumite Empire that once traded with Rome and India. Granite stelae up to 33 m carved seventeen centuries ago, underground royal tombs, and the chapel Ethiopian Orthodox tradition holds as the resting place of the Ark of the Covenant. This is deep-history Ethiopia; pair it with Lalibela on a full northern circuit.
